Description

A delightful and vibrant dish that brings together fresh Mediterranean flavors in a quick and easy format.


Ingredients

  • 8 oz pasta (e.g., penne or fusilli)
  • 1 cup frozen peas
  • 1 cup feta cheese, crumbled
  • 1/4 cup olive oil
  • 2 cloves garlic, minced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup fresh basil, chopped
  • Salt and pepper to taste
  • Juice of 1 lemon

Instructions

  1. Cook the pasta according to package instructions, adding salt to boiling water.
  2. Add the frozen peas in the last 2 minutes of cooking.
  3. Drain the pasta and peas together, reserving about a half cup of pasta water.
  4. Combine the drained pasta and peas with olive oil, minced garlic, and halved cherry tomatoes in a large bowl.
  5. Fold in crumbled feta cheese, chopped basil, and lemon juice until well combined.
  6. If pasta is too dry, add reserved pasta water as needed.
  7. Season with salt and pepper to taste.
  8. Serve warm or at room temperature, garnished with additional basil if desired.

Notes

Use fresh basil and high-quality feta for best flavor. Can be made gluten-free or vegan with appropriate substitutions.
