A delightful fall treat, this moist pumpkin bread is enhanced with a sweet maple glaze, perfect for breakfast or dessert.


Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon cloves
  • 1 cup sugar
  • 1/2 cup brown sugar
  • 1 cup canned pumpkin puree
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup powdered sugar
  • 2 tablespoons maple syrup
  • 12 tablespoons milk

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
  2. In a bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, and cloves until well combined.
  3. In another bowl, beat together the sugars, pumpkin puree, vegetable oil, eggs, and vanilla extract until smooth and creamy.
  4. Gradually add the dry ingredients to the wet ingredients, mixing gently until just combined.
  5. Pour the batter into the prepared loaf pan and smooth the top.
  6. Bake for 60-70 minutes, or until a toothpick inserted comes out clean.
  7. Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
  8. For the glaze, whisk together the powdered sugar, maple syrup, and enough milk to reach desired consistency.
  9. Once the bread is cooled, drizzle the maple glaze over the top before slicing.

Store leftover bread in an airtight container for up to 3 days or freeze for up to 3 months.
