  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/4 cups all-purpose flour
  • 1/2 cup unsweetened dark cocoa powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup red sanding sugar (for rolling)
  • 24 Hershey’s Kisses (milk chocolate or dark chocolate), unwrapped

Instructions

  1. Start by preheating your oven to 350°F (175°C). Line two large baking sheets with parchment paper or silicone baking mats to prevent the cookies from sticking and to ensure an easy cleanup.
  2. In a large mixing bowl, beat the softened butter and granulated sugar together using a hand mixer or stand mixer. Continue mixing for about 2-3 minutes until the mixture is light, fluffy, and pale in color.
  3. Add the egg and vanilla extract to the butter mixture. Beat on medium speed until fully combined, scraping down the sides of the bowl with a spatula as needed to ensure everything is incorporated.
  4. In a separate bowl, whisk together the flour, dark cocoa powder, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing on low speed just until a soft dough forms. Do not overmix, as this can make the cookies tough.
  5. Scoop about one tablespoon of dough at a time and roll it into a 1-inch ball between your palms. Roll each ball into the red sanding sugar until it is completely and evenly coated in sparkly red sugar.
  6. Place the sugar-coated dough balls onto the prepared baking sheets, spacing them about 2 inches apart. Bake for 8 to 10 minutes. The cookies will look slightly soft but will set as they cool.
  7. Immediately after removing the cookies from the oven, press a chocolate kiss firmly into the center of each warm cookie. This will cause the cookie to crack slightly around the edges, creating a beautiful “blossom” look. Let them cool on the pan for 5 minutes before moving them to a wire rack to cool completely.
