Preheat your oven to 325°F (160°C). Line a standard 12-cup muffin tin with paper liners. Place one whole Oreo cookie at the bottom of each liner to serve as the crust. There is no need to crush them; the whole cookie works perfectly!
In a large mixing bowl, beat the softened cream cheese and granulated sugar together until the mixture is completely smooth and creamy. It is important that the cream cheese is at room temperature to avoid lumps in your batter.
Mix in the sour cream and vanilla extract until well combined. Add the eggs one at a time, beating on low speed just until incorporated. Do not overmix the batter once the eggs are added, as this can introduce too much air and cause the cups to puff and sink.
Gently fold the coarsely chopped Oreo cookies into the cheesecake batter using a spatula. This ensures you get chunks of chocolatey goodness in every single bite.
Divide the cheesecake batter evenly among the 12 muffin liners, filling each nearly to the top. Place the tin in the oven and bake for 18 to 22 minutes, or until the edges are set and the centers only have a slight jiggle.
Remove the tin from the oven and allow the cheesecake cups to cool completely at room temperature. Once cool, transfer the tin to the refrigerator for at least 2 hours (or overnight) to allow them to firm up properly.
Melt the chocolate chips in the microwave in 30-second intervals until smooth. Transfer the melted chocolate to a small piping bag or a plastic sandwich bag with a tiny corner cut off. Pipe three concentric circles on top of each chilled cheesecake. Use a toothpick to drag lines from the center circle outward to the edge, creating a spider web effect.
