  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon pure vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 cups white royal icing
  • 1/2 cup black royal icing (fitted with a small round tip)
  • Toothpicks for marbling

Instructions

  1. In a large mixing bowl, beat the softened butter and granulated sugar together until the mixture is light and fluffy. This usually takes about 3 minutes with an electric mixer.
  2. Add the egg and vanilla extract to the butter mixture. Beat again until the ingredients are fully incorporated and the mixture is smooth.
  3. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until a dough forms.
  4. Divide the dough in half and wrap each piece in plastic wrap. Refrigerate for at least 30 minutes. Chilling the dough ensures the cookies do not spread too much in the oven.
  5. Preheat your oven to 350°F (175°C). Roll the dough out on a floured surface to about 1/4 inch thickness. Use a round cookie cutter to cut shapes and place them on a parchment-lined baking sheet. Bake for 8 to 10 minutes until the edges are just barely golden.
  6. Once the cookies are completely cool, outline and “flood” the top of each cookie with white royal icing. Work on one cookie at a time so the icing stays wet for the next step.
  7. While the white icing is still wet, use the black icing to pipe three or four concentric circles (rings) onto the cookie. Immediately take a toothpick and drag it from the center of the cookie toward the outer edge. Repeat this 6 to 8 times around the cookie to create the web effect.
  8. Allow the cookies to sit undisturbed for at least 2 hours or until the royal icing has hardened completely.
