- 6 ripe bananas, mashed
- 1 loaf of day-old bread, cubed
- 4 large eggs
- 1 cup milk
- 1 cup heavy cream
- 1 cup brown sugar
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/4 teaspoon salt
- For the toffee sauce:
- 1 cup brown sugar
- 1/2 cup unsalted butter
- 1/2 cup heavy cream
Instructions
- Preheat the oven to 350°F (175°C) and grease a baking dish.
- Combine the mashed bananas and cubed bread in a large bowl, and set aside.
- Whisk together the eggs, milk, heavy cream, brown sugar, vanilla extract, cinnamon, and salt in another bowl until smooth.
- Pour the egg mixture over the banana and bread mixture, stirring gently to combine. Let it sit for about 30 minutes to soak up the liquid.
- Pour the mixture into the prepared baking dish and bake for 45-50 minutes until set and golden brown.
- Melt the butter and brown sugar in a saucepan over medium heat, stirring until combined. Add the heavy cream and bring to a boil. Reduce heat and simmer for 5 minutes until thickened.
- Serve the bread pudding warm, generously drizzled with the toffee sauce.
Notes
Best enjoyed warm, paired with vanilla ice cream or whipped cream. Can be stored in the refrigerator for up to 3-4 days.
