Instructions
In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, pumpkin pie spice, and salt until well combined and free of lumps.
In a separate medium bowl, whisk the pumpkin puree, eggs, milk, 2 tablespoons of melted butter, and vanilla extract until the mixture is smooth and the eggs are fully incorporated.
Gently fold the wet ingredients into the dry ingredients using a spatula. Mix just until the flour disappears; be careful not to overmix, as this can make the donuts tough. The dough will be thick and slightly sticky.
Transfer the dough to a well-floured surface. Pat it down to about 1/2-inch thickness. Use a donut cutter or two round biscuit cutters (one large, one small for the center) to cut out 12 donut shapes. Re-roll the scraps as needed.
Preheat your air fryer to 350°F (175°C). Lightly grease the air fryer basket with cooking spray. Place a few donuts in the basket, ensuring they do not touch. Cook for 5 to 6 minutes, or until they have risen and are golden brown.
While the donuts are cooking, mix the coating sugar and cinnamon in a shallow bowl. Once the donuts are done, remove them from the air fryer. Brush them immediately with melted butter and toss them in the cinnamon-sugar mixture until fully coated.
