- 1 cup shredded zucchini
- 1/2 cup unsweetened cocoa powder
- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1/2 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup chocolate chips (optional)
Instructions
- Preheat the oven to 350°F (175°C) and grease a baking pan.
- Mix together the shredded zucchini, cocoa powder, all-purpose flour, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract in a large bowl until fully combined.
- Whisk together the baking powder, baking soda, and salt in another bowl.
- Fold the dry mixture into the wet ingredients until just combined, adding chocolate chips if desired.
- Pour the batter into the prepared pan and bake for 25-30 minutes.
- Let the brownies cool in the pan for 10 minutes before transferring to a wire rack, then cut into squares.
Notes
Squeeze excess moisture from the zucchini for best results. Can be made ahead of time and stored in an airtight container.
