Deliciously fudgy brownies that sneak in zucchini for added nutrition without compromising on flavor.


Ingredients

  • 1 cup shredded zucchini
  • 1/2 cup unsweetened cocoa powder
  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a baking pan.
  2. Mix together the shredded zucchini, cocoa powder, all-purpose flour, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract in a large bowl until fully combined.
  3. Whisk together the baking powder, baking soda, and salt in another bowl.
  4. Fold the dry mixture into the wet ingredients until just combined, adding chocolate chips if desired.
  5. Pour the batter into the prepared pan and bake for 25-30 minutes.
  6. Let the brownies cool in the pan for 10 minutes before transferring to a wire rack, then cut into squares.

Notes

Squeeze excess moisture from the zucchini for best results. Can be made ahead of time and stored in an airtight container.
