Description

These Tajín Watermelon Sugar Cookies combine the sweet flavor of sugar with the tangy kick of Tajín seasoning and refreshing watermelon for a chewy, flavorful treat.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup Tajín seasoning
  • 1/2 cup diced watermelon (dried or dehydrated preferred)
  • Optional: extra Tajín for sprinkling

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the softened butter and sugar until light and fluffy, about 2-3 minutes. Beat in the egg and vanilla extract until well combined.
  3. Whisk together the flour, baking powder, salt, and Tajín seasoning in another bowl.
  4. Gradually mix the dry ingredients into the wet mixture until just combined. Be careful not to over-mix! Fold in the diced watermelon gently.
  5. Drop rounded tablespoons of dough onto ungreased baking sheets, leaving space between each cookie.
  6. Sprinkle a little extra Tajín on top of each cookie if desired.
  7. Bake for about 10-12 minutes, or until edges are lightly golden.
  8. Allow to cool on the baking sheet for a few minutes before transferring to wire racks.

Notes

Store cookies in an airtight container at room temperature for up to a week. Freeze for longer storage.
