These Tajín Watermelon Sugar Cookies combine the sweet flavor of sugar with the tangy kick of Tajín seasoning and refreshing watermelon for a chewy, flavorful treat.

- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 cup Tajín seasoning
- 1/2 cup diced watermelon (dried or dehydrated preferred)
- Optional: extra Tajín for sprinkling
Instructions
- Preheat your oven to 350°F (175°C).
- Cream together the softened butter and sugar until light and fluffy, about 2-3 minutes. Beat in the egg and vanilla extract until well combined.
- Whisk together the flour, baking powder, salt, and Tajín seasoning in another bowl.
- Gradually mix the dry ingredients into the wet mixture until just combined. Be careful not to over-mix! Fold in the diced watermelon gently.
- Drop rounded tablespoons of dough onto ungreased baking sheets, leaving space between each cookie.
- Sprinkle a little extra Tajín on top of each cookie if desired.
- Bake for about 10-12 minutes, or until edges are lightly golden.
- Allow to cool on the baking sheet for a few minutes before transferring to wire racks.
Notes
Store cookies in an airtight container at room temperature for up to a week. Freeze for longer storage.
