Ingredients

  • 1 large watermelon
  • 1 cup coconut yogurt
  • 1/4 cup fresh berries (strawberries, blueberries, raspberries)
  • 1/4 cup granola or nuts (optional)
  • Mint leaves for garnish
  • Honey or agave syrup (optional)

Instructions

  1. Slice the watermelon into rounds that are about 1 inch thick.
  2. Place the watermelon slices on a serving platter.
  3. Spread a layer of coconut yogurt over each watermelon slice.
  4. Top each slice with fresh berries and sprinkle granola or nuts if desired.
  5. Drizzle with honey or agave syrup if you like.
  6. Garnish each slice with fresh mint leaves and serve immediately.

Notes

Best enjoyed fresh, but can be stored in an airtight container in the refrigerator for up to 2 days. Slice watermelon close to serving time to prevent excess water release.
