Description
A warm and comforting soup featuring hearty dumplings, fragrant broth, and vibrant vegetables, perfect for chilly evenings.
Ingredients
Scale
- 2 cups vegetable broth
- 1 cup water
- 1 cup mixed vegetables (carrots, peas, corn)
- 1 package of vegetarian dumplings
- 1 teaspoon garlic, minced
- 1 teaspoon ginger, minced
- 2 tablespoons soy sauce
- Salt and pepper to taste
- Green onions for garnish
Instructions
- In a large pot, combine vegetable broth, water, garlic, and ginger. Bring to a boil over medium-high heat.
- Once the broth reaches a rolling boil, add the mixed vegetables. Cook for about 5 minutes until the vegetables soften slightly.
- Gently add the vegetarian dumplings to the pot. Cook them according to package instructions, which usually takes about 5-7 minutes. Stir occasionally to ensure they don’t stick to the bottom.
- After the dumplings are cooked through, stir in the soy sauce and season with salt and pepper to taste. Give the soup a gentle stir, ensuring everything is well combined. Serve hot, garnished with sliced green onions for a fresh touch.
Notes
Use homemade vegetable broth for a richer flavor and feel free to customize with your favorite vegetables or greens.
