Ingredients

  • 2 1/2 cups all-purpose flour
  • 2 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup unsalted butter, softened
  • 2 cups granulated sugar
  • 5 large eggs
  • 1 tbsp vanilla extract
  • 1 vanilla bean, split and scraped
  • 1 cup whole milk
  • 3 cups powdered sugar
  • 1/2 cup unsalted butter, softened (for frosting)
  • 1/4 cup heavy cream

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour three 9-inch round cake pans.
  2. In a bowl, mix together the all-purpose flour, baking powder, and salt.
  3. In another bowl, cream the softened butter and granulated sugar until light and fluffy.
  4. Add the eggs one at a time, mixing well after each addition.
  5. Stir in the vanilla extract and the seeds from the split vanilla bean.
  6. Alternately add the dry mixture and whole milk to the butter mixture, beginning and ending with the dry mixture.
  7. Divide the batter evenly among the prepared pans. Bake for 25-30 minutes.
  8. Let the cakes cool in the pans for about 10 minutes, then turn onto wire racks to cool completely.
  9. For the frosting, beat together the softened butter and powdered sugar, adding heavy cream to desired consistency.
  10. Frost the top of two layers, stack them, and frost the top and sides of the cake.
  11. Decorate as desired with sprinkles, fresh fruits, or edible flowers.

Notes

For better results, use room temperature ingredients and avoid overmixing.
