- 1 cup brown sugar
- 1/4 cup butter
- 1 can (20 oz) sliced pineapple
- Maraschino cherries
- 1 1/2 cups all-purpose flour
- 1 1/2 tsp baking powder
- 1/2 tsp salt
- 1/2 cup granulated sugar
- 1/2 cup milk
- 1/3 cup vegetable oil
- 1 tsp vanilla extract
- 3 large eggs
Instructions
- Preheat your oven to 350°F (175°C).
- In a round cake pan, melt the butter over low heat and stir in the brown sugar until fully combined.
- Carefully arrange the pineapple slices on top and add a Maraschino cherry in the center of each slice.
- In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.
- In another bowl, mix the granulated sugar, milk, vegetable oil, vanilla extract, and eggs until smooth.
- Combine the wet and dry ingredients, gently stirring until just blended.
- Pour the batter evenly over the arranged pineapple and cherries.
- Bake in the preheated oven for 40-45 minutes, or until a toothpick inserted comes out clean.
- Let the cake cool for a few minutes before inverting it onto a plate.
