Description

A delightful dessert with caramelized pineapple and cherries atop a tender cake, perfect for any occasion.


Ingredients

  • 1 cup brown sugar
  • 1/4 cup butter
  • 1 can (20 oz) sliced pineapple
  • Maraschino cherries
  • 1 1/2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup granulated sugar
  • 1/2 cup milk
  • 1/3 cup vegetable oil
  • 1 tsp vanilla extract
  • 3 large eggs

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a round cake pan, melt the butter over low heat and stir in the brown sugar until fully combined.
  3. Carefully arrange the pineapple slices on top and add a Maraschino cherry in the center of each slice.
  4. In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.
  5. In another bowl, mix the granulated sugar, milk, vegetable oil, vanilla extract, and eggs until smooth.
  6. Combine the wet and dry ingredients, gently stirring until just blended.
  7. Pour the batter evenly over the arranged pineapple and cherries.
  8. Bake in the preheated oven for 40-45 minutes, or until a toothpick inserted comes out clean.
  9. Let the cake cool for a few minutes before inverting it onto a plate.
