Description

A one-pan meal featuring ground turkey, rice, and juicy tomatoes, perfect for busy weeknights.


Ingredients

  • 1 lb ground turkey
  • 1 cup rice
  • 1 can diced tomatoes
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Heat about 2 tablespoons of olive oil in a skillet over medium heat until shimmering.
  2. Add the chopped onion and minced garlic to the skillet and sauté until translucent, about 3-5 minutes.
  3. Add the ground turkey to the skillet and cook, stirring frequently, until browned, about 5-7 minutes.
  4. Stir in the rice, diced tomatoes, chicken broth, Italian seasoning, salt, and pepper. Bring to a boil, then reduce heat and cover to simmer for about 20 minutes.

Notes

For firmer rice, consider cooking it separately before adding to the skillet. Add red pepper flakes for extra spice.
