Instructions

  1. Heat the olive oil in a large skillet over medium heat until it shimmers.
  2. Add the chopped onion and minced garlic, sautéing until fragrant and translucent, about 3-4 minutes.
  3. Cook the ground turkey, breaking it apart with a spoon, until browned and cooked through, about 5-7 minutes.
  4. Incorporate the sliced mushrooms and cook for another 3-4 minutes until they soften.
  5. Add the fresh spinach and cook until it wilts down, about 2 minutes.
  6. Season with salt and pepper to taste.
