- 1 cup all-purpose flour
- 1/2 cup cocoa powder

- 1 teaspoon vanilla extract
- 1/2 cup milk
- 1 cup strong brewed coffee, cooled
- 1 cup mascarpone cheese
- 1/4 cup powdered sugar
- 1/2 cup heavy cream
Instructions
- Preheat your oven to 350°F (175°C) and line a cupcake tin with paper liners.
- In a bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt.
- Cream the softened butter and sugar together until light and fluffy.
- Add the eggs one at a time, mixing well after each addition, and then mix in the vanilla extract.
- Gradually add the dry ingredients to the wet mixture, alternating with the milk.
- Fill each cupcake liner with the batter about 2/3 full and bake for 18-20 minutes.
- For the filling, beat the mascarpone cheese and powdered sugar together until smooth.
- Whip the heavy cream until stiff peaks form and gently fold it into the mascarpone mixture.
- Poke holes in the tops of each cupcake with a toothpick and drizzle the cooled coffee over the tops.
- Fill each cupcake with the mascarpone filling using a piping bag or a spoon.
- Top each cupcake with a dusting of cocoa powder or chocolate shavings before serving.
Notes
Store the cupcakes in an airtight container in the refrigerator for up to 3 days. For the best taste, add the filling and topping right before serving.
