Description

A delightful twist on traditional tiramisu, these cupcakes feature coffee-infused cake layered with creamy mascarpone filling, making them perfect for any occasion.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup milk
  • 1 cup strong brewed coffee, cooled
  • 1 cup mascarpone cheese
  • 1/4 cup powdered sugar
  • 1/2 cup heavy cream

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake tin with paper liners.
  2. In a bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt.
  3. Cream the softened butter and sugar together until light and fluffy.
  4. Add the eggs one at a time, mixing well after each addition, and then mix in the vanilla extract.
  5. Gradually add the dry ingredients to the wet mixture, alternating with the milk.
  6. Fill each cupcake liner with the batter about 2/3 full and bake for 18-20 minutes.
  7. For the filling, beat the mascarpone cheese and powdered sugar together until smooth.
  8. Whip the heavy cream until stiff peaks form and gently fold it into the mascarpone mixture.
  9. Poke holes in the tops of each cupcake with a toothpick and drizzle the cooled coffee over the tops.
  10. Fill each cupcake with the mascarpone filling using a piping bag or a spoon.
  11. Top each cupcake with a dusting of cocoa powder or chocolate shavings before serving.

Notes

Store the cupcakes in an airtight container in the refrigerator for up to 3 days. For the best taste, add the filling and topping right before serving.
