Ingredients

  • 1/2 cup creamy peanut butter
  • 1/4 cup soy sauce
  • 2 tablespoons chili paste or sriracha
  • 2 tablespoons rice vinegar
  • 1 tablespoon lime juice
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • 1/4 cup water (adjust for desired sauce thickness)
  • Green onions, chopped (for garnish)
  • Chopped peanuts (for garnish)

Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. Whisk together the peanut butter, soy sauce, chili paste, rice vinegar, lime juice, garlic, ginger, and water until smooth.
  3. Combine the cooked pasta and peanut sauce in a large skillet over medium heat. Toss to coat the pasta evenly.
  4. Cook for 2-3 minutes until heated through. Serve topped with chopped green onions and peanuts.

Notes
