Description

Delicious and customizable breakfast burritos filled with scrambled eggs, sausage, and cheese, perfect for busy mornings.


Ingredients

  • 4 large flour tortillas
  • 6 eggs
  • 1 cup cooked and crumbled breakfast sausage
  • 1 cup shredded cheese (cheddar or your choice)
  • 1/2 cup diced bell peppers
  • 1/2 cup diced onions
  • Salt and pepper to taste
  • Salsa (optional)

Instructions

  1. Sauté the diced bell peppers and onions until they are soft.
  2. Whisk the eggs with salt and pepper and pour into the skillet with the veggies.
  3. Cook until the eggs are scrambled and set.
  4. Lay out the tortillas and distribute the scrambled eggs, sausage, and cheese evenly.
  5. Roll each tortilla tightly, folding in the sides.
  6. Wrap each burrito in plastic wrap and place in a freezer-safe bag.
  7. To reheat, unwrap and microwave for 1-2 minutes or until heated through.
  8. Serve with salsa if desired.

Notes

These burritos can be frozen for up to three months. For best results, label storage bags with the date.
