- 4 large flour tortillas
- 6 eggs
- 1 cup cooked and crumbled breakfast sausage
- 1 cup shredded cheese (cheddar or your choice)
- 1/2 cup diced bell peppers
- 1/2 cup diced onions
- Salt and pepper to taste
- Salsa (optional)
Instructions
- Sauté the diced bell peppers and onions until they are soft.
- Whisk the eggs with salt and pepper and pour into the skillet with the veggies.
- Cook until the eggs are scrambled and set.
- Lay out the tortillas and distribute the scrambled eggs, sausage, and cheese evenly.
- Roll each tortilla tightly, folding in the sides.
- Wrap each burrito in plastic wrap and place in a freezer-safe bag.
- To reheat, unwrap and microwave for 1-2 minutes or until heated through.
- Serve with salsa if desired.
Notes
These burritos can be frozen for up to three months. For best results, label storage bags with the date.
