- 2 large sweet potatoes, peeled and diced
- 6 large eggs
- 1/2 cup milk
- 1 cup shredded cheese (cheddar or your choice)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon paprika
- Optional: diced bell peppers, onions, or spinach
Instructions
- Preheat the oven to 375°F (190°C). Prepare a greased baking dish for the casserole.
- Mix the diced sweet potatoes with a little olive oil, salt, and pepper until well coated. Spread the sweet potato mixture evenly in the prepared baking dish.
- Whisk together the eggs, milk, paprika, and any additional diced vegetables. Pour this mixture over the sweet potatoes and top with shredded cheese.
- Bake for 30-35 minutes, or until the eggs are set and the top is golden brown. Allow to cool for a few minutes before slicing and serving.
Notes
