Description

A delightful casserole featuring creamy eggs and tender sweet potatoes, perfect for brunch or a light dinner.


Ingredients

  • 2 large sweet potatoes, peeled and diced
  • 6 large eggs
  • 1/2 cup milk
  • 1 cup shredded cheese (cheddar or your choice)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon paprika
  • Optional: diced bell peppers, onions, or spinach

Instructions

  1. Preheat the oven to 375°F (190°C). Prepare a greased baking dish for the casserole.
  2. Mix the diced sweet potatoes with a little olive oil, salt, and pepper until well coated. Spread the sweet potato mixture evenly in the prepared baking dish.
  3. Whisk together the eggs, milk, paprika, and any additional diced vegetables. Pour this mixture over the sweet potatoes and top with shredded cheese.
  4. Bake for 30-35 minutes, or until the eggs are set and the top is golden brown. Allow to cool for a few minutes before slicing and serving.

Notes
