Ingredients

  • 1/2 cup sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup milk
  • 1/4 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1/2 cup mini chocolate chips
  • 1 large egg

Instructions

  1. Preheat the oven to 350°F (175°C) and line a mini muffin pan with paper liners.
  2. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, mix together the milk, vegetable oil, vanilla extract, and egg until fully combined.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined, then fold in the mini chocolate chips.
  5. Spoon the batter into the prepared mini muffin pan, filling each cup about 2/3 full. Bake for 10-12 minutes or until a toothpick comes out clean.
  6. Let the muffins cool for a few minutes in the pan before transferring to a wire rack.
