Ingredients

  • 1 cup salted butter (softened)
  • 1/2 cup powdered sugar
  • 1 1/2 cups freeze-dried strawberries (blended into powder)
  • 1 teaspoon pure vanilla extract
  • 2 cups all-purpose flour
  • 12 tablespoons milk (for glaze)
  • 1 cup powdered sugar (for glaze)
  • 1/4 teaspoon pure vanilla extract (for glaze)
  • 1 tablespoon freeze-dried strawberries (processed for glaze)

Instructions

  1. Preheat the oven to 325°F (160°C) and line baking sheets with parchment paper.
  2. Blend freeze-dried strawberries in a food processor until powdery. In a large mixing bowl, cream together softened butter and powdered sugar until smooth.
  3. Mix in vanilla extract and blend in strawberry powder. Gradually add the flour until a soft dough forms.
  4. Roll out dough to about 1/4 inch thick on a floured surface and cut into shapes. Bake for 12-15 minutes until edges are golden; cool for 5 minutes before transferring to a wire rack.
  5. For the glaze, whisk together reserved strawberry powder, milk, and powdered sugar until smooth. Drizzle over cooled cookies.
