  • 1 cup crushed freeze-dried strawberries
  • Zest of 1 lemon
  • 1/4 cup fresh lemon juice

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the butter, granulated sugar, and brown sugar until fluffy.
  3. Beat in the eggs and vanilla extract until smooth.
  4. Whisk together the flour, baking soda, and salt in a separate bowl.
  5. Gradually add the dry mixture to the butter mixture until just combined.
  6. Fold in the crushed strawberries, lemon zest, and lemon juice.
  7. Drop spoonfuls of dough onto a baking sheet lined with parchment paper.
  8. Bake for 10-12 minutes until edges are lightly golden.
  9. Allow cookies to cool on the baking sheet briefly before transferring to wire racks.
