Description

Deliciously warm and fluffy muffins made on the stovetop, perfect for toast, sandwiches, or a quick snack.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup warm milk
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 2 tablespoons melted butter
  • 1/4 teaspoon baking soda
  • Cornmeal (for dusting)

Instructions

  1. Mix warm milk, sugar, and melted butter in a bowl until well combined.
  2. Add baking powder, salt, and baking soda to the milk mixture, then gradually add the flour. Mix until a soft dough forms.
  3. Turn the dough out onto a floured surface and knead gently for a minute. Roll it out to about 1/2-inch thickness. Use a round cutter to cut out circles.
  4. Dust the cut muffins with cornmeal on both sides and let them rest for 20 minutes.
  5. Heat a skillet over low to medium heat. Cook muffins for about 8-10 minutes on each side, until they are golden brown and cooked through.
  6. Allow the muffins to cool slightly before slicing them open.

Notes

Use warm milk to activate the baking powder. Don’t over-knead the dough to avoid tough muffins.
