- 2 cups all-purpose flour
- 1 cup warm milk
- 2 tablespoons sugar
- 1 tablespoon baking powder
- 1 teaspoon salt
- 2 tablespoons melted butter
- 1/4 teaspoon baking soda
- Cornmeal (for dusting)
Instructions
- Mix warm milk, sugar, and melted butter in a bowl until well combined.
- Add baking powder, salt, and baking soda to the milk mixture, then gradually add the flour. Mix until a soft dough forms.
- Turn the dough out onto a floured surface and knead gently for a minute. Roll it out to about 1/2-inch thickness. Use a round cutter to cut out circles.
- Dust the cut muffins with cornmeal on both sides and let them rest for 20 minutes.
- Heat a skillet over low to medium heat. Cook muffins for about 8-10 minutes on each side, until they are golden brown and cooked through.
- Allow the muffins to cool slightly before slicing them open.
Notes
Use warm milk to activate the baking powder. Don’t over-knead the dough to avoid tough muffins.
