Description

Moist, fluffy, and delightfully sweet, Sprite Pound Cake is an easy-to-make dessert that brings a burst of citrus flavor to your table.

Ingredients

Scale
  • 1 cup butter, softened
  • 2 cups sugar
  • 4 eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup Sprite or lemon-lime soda

Instructions

  1. Preheat the oven to 325°F (165°C). Grease and flour a bundt pan to prevent the cake from sticking when baked.
  2. In a large mixing bowl, cream together the softened butter and sugar until light and fluffy, about 3-5 minutes. Beat in the eggs one at a time, then stir in the vanilla extract.
  3. In a separate bowl, mix the flour, baking powder, and salt. Gradually add this mixture to the butter mixture, alternating with the Sprite, mixing gently until just combined.
  4. Pour the prepared batter into the greased bundt pan. Bake for 60-70 minutes or until a toothpick inserted into the center comes out clean. Allow the cake to cool in the pan for 10-15 minutes before transferring to a wire rack to cool completely.

Notes

Serve slices with a dusting of powdered sugar, whipped cream, or fresh berries. Storing in an airtight container keeps the cake fresh for up to 3 days.
