Description

This dish features tender chicken coated in a spicy maple glaze served alongside fluffy coconut-infused jasmine rice, perfect for a quick weeknight dinner.


Ingredients

  • 4 chicken breasts
  • 1/4 cup maple syrup
  • 2 tablespoons soy sauce
  • 1 tablespoon sriracha
  • 2 cups coconut milk
  • 1 cup jasmine rice
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. In a bowl, mix together maple syrup, soy sauce, and sriracha to create the marinade. Add the chicken breasts, coat well, and marinate for at least 30 minutes.
  2. In a saucepan, combine jasmine rice, coconut milk, and a pinch of salt. Bring to a boil, then reduce heat to low, cover, and simmer for about 15-20 minutes until the rice is cooked.
  3. While the rice is cooking, preheat a grill or skillet over medium heat. Cook the marinated chicken for about 6-7 minutes on each side or until fully cooked.
  4. Serve the glazed chicken alongside the coconut rice, garnished with fresh cilantro for a pop of color and flavor.

Notes

For added flavor, you can include garlic or ginger in the marinade. This dish can also be made gluten-free using tamari instead of soy sauce.
