Ingredients

  • 1 cup powdered sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 tablespoons lemon zest
  • 1/4 cup lemon juice
  • 4 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the softened butter, granulated sugar, and powdered sugar until smooth.
  3. Beat in the eggs, vanilla extract, lemon zest, and lemon juice.
  4. Whisk together the flour, baking powder, baking soda, and salt in a separate bowl.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Drop rounded tablespoons of dough onto baking sheets lined with parchment paper.
  7. Bake for 10-12 minutes, or until the edges are set and the tops just start to golden.
  8. Remove from the oven and let cool on the sheets for a few minutes before transferring to a wire rack to cool completely.

Notes
