Instructions
- Preheat your oven to 350°F (175°C).
- Cream together the softened butter, granulated sugar, and powdered sugar until smooth.
- Beat in the eggs, vanilla extract, lemon zest, and lemon juice.
- Whisk together the flour, baking powder, baking soda, and salt in a separate bowl.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Drop rounded tablespoons of dough onto baking sheets lined with parchment paper.
- Bake for 10-12 minutes, or until the edges are set and the tops just start to golden.
- Remove from the oven and let cool on the sheets for a few minutes before transferring to a wire rack to cool completely.
