  • 1 French baguette, sliced into 1/2-inch rounds
  • 3 tablespoons extra virgin olive oil
  • 1 ½ cups whole milk ricotta cheese
  • 1 tablespoon heavy cream (optional, for extra fluffiness)
  • 1 teaspoon lemon zest
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly cracked black pepper
  • 2 tablespoons honey, for drizzling
  • 1 tablespoon fresh thyme leaves or chopped rosemary
  • Flaky sea salt, for finishing

Instructions

  1. Preheat your oven to 400°F (200°C). Arrange the baguette slices in a single layer on a large baking sheet. Using a pastry brush, lightly coat both sides of each bread slice with olive oil.
  2. Place the baking sheet in the oven and bake for 7 to 9 minutes, turning the slices halfway through. Watch them closely to ensure they become golden brown and crisp but not overly hard. Once toasted, remove them from the oven and let them cool slightly.
  3. In a food processor or blender, combine the ricotta cheese, heavy cream, lemon zest, salt, and pepper. Pulse the mixture for about 1 to 2 minutes until it is completely smooth and light. It should look like a thick, airy frosting.
  4. Generously spread about a tablespoon of the whipped ricotta onto each toasted baguette slice. For a fancier look, you can use a piping bag to swirl the cheese on. Drizzle each piece with a bit of honey and sprinkle with fresh thyme and a pinch of flaky sea salt.
