  • 2 cans (15 oz each) chickpeas (garbanzo beans)
  • 2 tablespoons extra-virgin olive oil
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper (adjust for more or less heat)
  • 1/2 teaspoon ground cumin

Instructions

  1. Preheat your oven to 400°F (200°C). Drain the chickpeas into a colander and rinse them thoroughly under cold running water. Spread the chickpeas out on a clean kitchen towel or several layers of paper towels. Pat them gently until they are completely dry. Removing as much moisture as possible is crucial for achieving a crispy texture.
  2. In a medium mixing bowl, whisk together the olive oil, salt, garlic powder, onion powder, smoked paprika, cayenne pepper, and cumin. Add the dried chickpeas to the bowl and toss them well until every chickpea is evenly coated with the spicy oil mixture.
  3. Spread the seasoned chickpeas in a single layer on a large rimmed baking sheet. Place them in the preheated oven and roast for 30 minutes. Every 10 to 15 minutes, give the pan a good shake to ensure the chickpeas roast evenly on all sides. Roast until they are golden brown and crunchy.
  4. Remove the baking sheet from the oven. Let the chickpeas cool on the pan for at least 5 to 10 minutes. As they cool, they will continue to crisp up even further. Serve immediately or store for later.
