2 large English cucumbers (or 4 Persian cucumbers)
1 can (5 oz) tuna in water, drained
3 tablespoons cream cheese, softened
1 tablespoon Sriracha sauce (adjust to taste)
1 teaspoon lime juice
1 green onion, thinly sliced
1 teaspoon sesame seeds
Optional: Everything bagel seasoning or red pepper flakes
Instructions
Wash the cucumbers thoroughly and pat them dry. Slice each cucumber in half lengthwise. Use a small spoon to gently scoop out the seeds from the center, creating a hollow “boat” shape. If using large cucumbers, you can cut them into smaller 3-inch sections for easier handling.
In a small mixing bowl, combine the drained tuna, softened cream cheese, Sriracha, and lime juice. Use a fork to mash and stir the ingredients together until the mixture is creamy and the tuna is well-incorporated. Taste and add more Sriracha if you prefer more heat.
Using a spoon or a small spatula, fill the hollowed-out centers of the cucumbers with the spicy tuna mixture. Spread it evenly from end to end, pressing down slightly to ensure it stays in place.
Sprinkle the sliced green onions, sesame seeds, and any additional seasonings over the top of the filled boats. For an extra pop of flavor and heat, drizzle a tiny bit more Sriracha or chili oil over the top before serving immediately.
