  • 1 tablespoon olive oil (for roasting)
  • 1 can (15 oz) cannellini beans or Great Northern beans, rinsed and drained
  • 1 cup pure pumpkin puree (not pumpkin pie filling)
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon fresh rosemary or sage, finely chopped
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon sea salt (plus more to taste)
  • 1/4 teaspoon black pepper
  • Optional: A pinch of red pepper flakes for heat

Instructions

  1. Step 1: Roast the Garlic – Preheat your oven to 400°F (200°C). Slice the top off the head of garlic to expose the cloves. Place it on a piece of aluminum foil, drizzle with one tablespoon of olive oil, and wrap it tightly. Roast in the oven for 35 to 40 minutes until the cloves are soft and golden brown. Let it cool before squeezing the roasted cloves out of their skins.
  2. Step 2: Prepare the Beans and Pumpkin – While the garlic is roasting, drain the white beans into a colander and rinse them thoroughly under cold water. This removes excess sodium and starch. Let them drain completely so your dip doesn’t become watery. Measure out your pumpkin puree and ensure it is 100% pure pumpkin.
  3. Step 3: Combine Ingredients in the Processor – In a food processor or high-powered blender, combine the rinsed white beans, pumpkin puree, the squeezed-out roasted garlic cloves, extra virgin olive oil, lemon juice, and chopped herbs. Having everything ready at once ensures an even blend.
  4. Step 4: Blend Until Smooth – Process the mixture on high for 1 to 2 minutes. Stop the machine halfway through to scrape down the sides with a spatula. Continue blending until the texture is completely smooth and creamy. If the dip is too thick, you can add a teaspoon of water or additional olive oil to reach your desired consistency.
  5. Step 5: Season and Final Pulse – Add the sea salt, black pepper, smoked paprika, and optional red pepper flakes. Pulse the food processor a few more times to incorporate the spices. Taste the dip and adjust the salt or lemon juice as needed to make the flavors pop.
  6. Step 6: Garnish and Serve – Transfer the dip to a serving bowl. Use the back of a spoon to create a swirl on the surface. Drizzle with a little extra olive oil and sprinkle with more fresh herbs or a dash of paprika for a professional look.
