  • 9 cups Rice Chex or Corn Chex cereal
  • 1 1/2 cups white chocolate chips
  • 1/4 cup salted butter, cubed
  • 1 1/2 teaspoons pumpkin pie spice
  • 1/2 teaspoon vanilla extract
  • 1 1/2 cups powdered sugar
  • Optional: 1/2 cup orange melting wafers for extra color

Instructions

  1. Measure out 9 cups of cereal into a very large mixing bowl. Make sure the bowl is big enough to allow for tossing without the cereal spilling over the sides.
  2. In a medium microwave-safe bowl, combine the white chocolate chips and butter. Microwave in 30-second intervals, stirring in between, until the mixture is completely smooth and melted. Be careful not to overheat the chocolate, as it can seize.
  3. Once the chocolate is melted, stir in the pumpkin pie spice and vanilla extract. The mixture should smell incredibly fragrant. If you want a deeper orange color, you can add a drop of food coloring or include melted orange wafers during this step.
  4. Pour the melted chocolate mixture over the cereal in the large bowl. Using a rubber spatula, gently fold the mixture until every piece of cereal is evenly coated. Work carefully so you do not crush the cereal pieces.
  5. Place the powdered sugar into a large gallon-sized resealable plastic bag. Add the coated cereal to the bag, seal it tightly, and shake vigorously until all the pieces are well-coated with sugar. You can also do this in a large lidded container.
  6. Spread the snack mix out onto a sheet of parchment paper or a baking sheet in a single layer. Let it sit for about 20 to 30 minutes at room temperature until the chocolate has completely hardened before serving.
