Toss gently to combine all the ingredients without mashing the fruit. Let the salsa sit in the refrigerator for at least 15 minutes to allow the flavors to meld.
Preheat your oven to 350°F (175°C). Line two large baking sheets with parchment paper or silicone baking mats to prevent the chips from sticking and to make cleanup easier.
In a small bowl, whisk together the granulated sugar and ground cinnamon until they are evenly mixed. This will be used to give your chips their signature sweet and spicy flavor.
