  • 1/2 cup creamy almond butter (or peanut butter, no sugar added)
  • 1/2 cup dried apples, finely chopped
  • 1/4 cup ground flaxseeds
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon vanilla extract
  • 1/8 teaspoon salt
  • 12 tablespoons water (if needed for binding)

Instructions

  1. Take your dried apples and chop them into very small, uniform pieces. This ensures that every bite has a bit of apple flavor and that the energy bites hold their shape better.
  2. In a large mixing bowl, stir together the rolled oats, chopped dried apples, ground flaxseeds, cinnamon, and salt. Make sure the cinnamon is evenly distributed through the oats.
  3. Add the almond butter and vanilla extract to the dry mixture. Use a sturdy spatula or your hands to mix everything together until a thick, sticky dough forms. If the mixture seems too crumbly and won’t stick together, add water one tablespoon at a time.
  4. Place the bowl in the refrigerator for about 20 to 30 minutes. Chilling the dough allows the oats to absorb some of the moisture, making the mixture much easier to roll into balls without sticking to your hands.
  5. Scoop about one tablespoon of the mixture at a time. Roll it firmly between your palms to form a ball about one inch in diameter. Place the finished bites on a plate or in a container.
