Garlic Parmesan Pretzel Bites

  • 1 pound pizza dough (store-bought or homemade)
  • 6 cups water
  • 1/3 cup baking soda
  • 1 egg (beaten for egg wash)
  • 3 tablespoons unsalted butter, melted
  • 1/2 teaspoon garlic powder
  • 1/4 cup grated parmesan cheese
  • 1 teaspoon dried parsley (optional)
  • Coarse sea salt to taste

Instructions

  1. Preheat your oven to 425°F (220°C) and line a large baking sheet with parchment paper or a silicone baking mat. On a lightly floured surface, roll out your pizza dough and cut it into long ropes about 1 inch thick. Use a knife or kitchen shears to snip the ropes into 1-inch bite-sized pieces.
  2. In a large pot, bring the 6 cups of water to a boil. Carefully and slowly add the baking soda; it will bubble up significantly, so do this gradually. Drop the dough bites into the boiling water in small batches. Let them boil for about 30 seconds until they slightly puff up, then remove them with a slotted spoon and place them onto the prepared baking sheet.
  3. Brush the tops of the boiled dough bites with the beaten egg wash. This is a crucial step that helps the pretzels achieve that beautiful shiny, golden-brown color during the baking process. Sprinkle a little coarse sea salt over the top of each bite while they are still wet from the egg wash.
  4. Place the baking sheet in the oven and bake for 10 to 12 minutes. You are looking for a deep golden-brown color. While the bites are baking, whisk together the melted butter and garlic powder in a large mixing bowl.
  5. Once the bites are out of the oven and still hot, transfer them immediately to the bowl with the garlic butter. Toss gently to coat every piece. Sprinkle the grated parmesan cheese and dried parsley over the bites and toss again until the cheese sticks to the buttery surface. Serve immediately while warm.
