Step 1: Prepare the Watermelon. Start by cutting a fresh, ripe watermelon into uniform 1-inch cubes. You can also use a melon baller to create fun spherical shapes. Once cut, pat the watermelon pieces dry with a paper towel. Removing excess moisture helps the yogurt coating stick better to the fruit.
Step 2: Prepare the Yogurt Coating. In a small bowl, whisk together the Greek yogurt and the honey or agave nectar until the mixture is smooth. If you prefer a more tart flavor, you can skip the sweetener. If the yogurt is too thick, you can add a teaspoon of lime juice to thin it out slightly for easier dipping.
Step 3: Dip and Arrange. Line a baking sheet with parchment paper or a silicone mat. Insert a toothpick into each watermelon piece. Dip the bottom half or the entire cube into the yogurt mixture, allowing any excess to drip off. Place each coated piece onto the prepared baking sheet, ensuring they do not touch each other.
Step 4: Season and Freeze. While the yogurt is still wet, generously sprinkle the Tajin seasoning over the top of each bite. This ensures the spices stick to the yogurt. Place the baking sheet in the freezer for at least 2 hours, or until the yogurt is firm and the watermelon is partially frozen.
