1 tube (8 oz) refrigerated crescent roll dough or 1 sheet of puff pastry
8 oz Brie cheese, cut into 24 small cubes
1/2 cup whole berry cranberry sauce
1/4 cup chopped pecans or walnuts
2 sprigs fresh rosemary, cut into small pieces
Optional: Honey for drizzling
Instructions
Step 1: Preparation and Preheating Preheat your oven to 375°F (190°C). Lightly grease a 24-slot mini muffin tin with non-stick cooking spray to ensure the bites release easily after baking.
Step 2: Cutting the Pastry On a lightly floured surface, roll out your crescent dough or puff pastry. Use a knife or a pizza cutter to cut the dough into 24 equal-sized squares. Gently press each square into the slots of the prepared mini muffin tin.
Step 3: Adding the Cheese Place one small cube of Brie cheese into each pastry-lined slot. You don’t need to remove the rind of the Brie unless you personally prefer it without; it is completely edible and helps the cheese hold its shape.
Step 4: Adding the Toppings Top each piece of cheese with a generous teaspoon of cranberry sauce. Sprinkle the chopped pecans evenly over the tops of all the bites.
Step 5: Baking to Golden Perfection Place the muffin tin in the oven and bake for 10 to 12 minutes. You want the pastry to be golden brown and the cheese to be melted and bubbly.
Step 6: Final Garnish Remove the tin from the oven and let it cool for a couple of minutes. While still warm, top each bite with a small piece of fresh rosemary. If you like a touch of extra sweetness, add a tiny drizzle of honey before serving.
