2 cups shredded cooked chicken (rotisserie chicken works great)
4 ounces cream cheese, softened
1/2 cup buffalo wing sauce
1/2 cup shredded cheddar cheese
2 tablespoons sliced green onions
24 wonton wrappers
Small bowl of water (for sealing)
Vegetable oil for frying
Ranch or blue cheese dressing for dipping
Instructions
Step 1: Prepare the Buffalo Chicken Filling. In a large mixing bowl, combine the shredded chicken, softened cream cheese, buffalo wing sauce, shredded cheddar cheese, and sliced green onions. Use a spatula or spoon to mix everything until the ingredients are thoroughly combined and the chicken is well-coated in the creamy sauce.
Step 2: Assemble the Wonton Bombs. Lay out a few wonton wrappers on a clean, dry surface. Place about one tablespoon of the chicken mixture in the center of each wrapper. Do not overfill, or they may burst during cooking. Dip your finger in the bowl of water and moisten all four edges of the wonton wrapper.
Step 3: Seal the Wontons. Bring the opposite corners of the wonton wrapper together over the filling and pinch them tightly to seal. Bring the remaining two corners to the center and pinch all edges together to create a little pouch or “bomb” shape. Ensure there are no air pockets and that the seal is completely secure.
Step 4: Heat the Cooking Oil. Fill a heavy-bottomed pot or a deep skillet with about 2 inches of vegetable oil. Heat the oil over medium-high heat until it reaches approximately 350°F (175°C). You can test the heat by dropping a small piece of wonton wrapper into the oil; if it sizzles and floats immediately, the oil is ready.
Step 5: Fry Until Golden Brown. Carefully place 4 to 6 wontons into the hot oil at a time, being careful not to overcrowd the pot. Fry for about 2 to 3 minutes, turning them occasionally, until they are golden brown and crispy on all sides. Use a slotted spoon to remove them from the oil.
Step 6: Drain and Serve. Place the fried wonton bombs on a plate lined with paper towels to drain any excess oil. Let them cool for a few minutes before serving, as the filling will be very hot. Serve warm with your favorite dipping sauce.
