Ingredients

Scale
  • 12 oz fresh cranberries (washed and stems removed)
  • 1 large orange (zested and peeled)
  • 1/2 cup granulated sugar (adjust to taste)
  • 1/4 cup fresh cilantro, chopped
  • 2 green onions, thinly sliced
  • 1 jalapeño, seeded and finely minced
  • 1 tablespoon lime juice
  • 1/4 teaspoon salt

Instructions

  1. Place the fresh cranberries into a food processor. Pulse them several times until they are coarsely chopped. Be careful not to over-process; you want small chunks, not a puree.
  2. Zest the orange and set the zest aside. Carefully peel the orange, remove any white pith, and cut the flesh into small segments. Add the orange segments and the zest to the food processor with the cranberries.
  3. Add the sugar, cilantro, green onions, jalapeño, lime juice, and salt to the processor. Pulse 2 or 3 more times just until everything is combined and the ingredients are uniform in size.
  4. Transfer the salsa to a glass bowl. Cover and refrigerate for at least 30 minutes before serving. This allows the sugar to macerate the fruit and the flavors to meld together beautifully.
