1/3 cup mini semi-sweet chocolate chips

Instructions
In a large mixing bowl, whisk together the rolled oats, protein powder, pumpkin pie spice, and a pinch of salt. Ensure there are no large clumps of protein powder so the flavor is evenly distributed.
Add the pumpkin puree, nut butter, maple syrup, and vanilla extract to the dry mixture. Use a spatula or a sturdy spoon to stir everything together until a thick, sticky dough forms. If the mixture seems too dry, add a teaspoon of water or almond milk at a time until it holds together.
Gently fold in the mini chocolate chips using a spatula. Mini chips are preferred here because they distribute more evenly throughout the bites, ensuring a bit of chocolate in every mouthful.
Scoop about one tablespoon of the mixture at a time and roll it between your palms to form a ball. If the dough is too sticky to handle, chill it in the refrigerator for 20 minutes before rolling. Repeat until all the dough is used.
