2 lbs chicken wings, split into flats and drumettes
1 tablespoon aluminum-free baking powder
1 teaspoon kosher salt
1/2 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon smoked paprika

1/2 cup Buffalo sauce (optional for tossing)
Instructions
Pat the chicken wings completely dry with paper towels. Removing excess moisture is the most important step for getting crispy skin. If the wings are damp, they will steam instead of crisp.
In a large bowl, whisk together the baking powder, salt, pepper, garlic powder, and paprika. Add the wings to the bowl and toss until every piece is evenly coated with the powder mixture.
Line a baking sheet with foil for easy cleanup and place a wire cooling rack on top. Lightly spray the rack with oil. Arrange the wings in a single layer on the rack, ensuring they are not touching so the air can circulate.
Bake in a preheated oven at 425°F (220°C). Cook for 45 to 50 minutes, flipping the wings halfway through, until they are golden brown and the skin is very crispy.
Remove the wings from the oven and let them rest for 5 minutes. If you are using sauce, place the wings in a clean bowl, pour the sauce over them, and toss to coat before serving immediately.
