  • 1 large head of cauliflower, cut into bite-sized florets
  • 3/4 cup all-purpose flour
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 3/4 cup water (or milk of choice)
  • 2/3 cup buffalo hot sauce
  • 2 tablespoons melted butter (or coconut oil for vegan option)
  • 1 tablespoon honey or maple syrup (optional, for balance)

Instructions

  1. Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper or a silicone baking mat. This ensures the cauliflower doesn’t stick and helps with the cleanup later.
  2. In a large mixing bowl, whisk together the flour, garlic powder, salt, and pepper. Gradually add the water or milk, whisking until the batter is smooth. It should be thick enough to coat the cauliflower without completely dripping off.
  3. Add the cauliflower florets into the bowl with the batter. Use a spatula or your hands to toss them gently until every piece is evenly coated. Lift each floret out, shake off any excess batter, and place them in a single layer on the prepared baking sheet.
  4. Place the baking sheet in the oven and bake for 15 to 20 minutes. You want the batter to set and the edges of the cauliflower to start turning a light golden brown. Flip the pieces halfway through for even cooking.
  5. While the cauliflower bakes, whisk together the buffalo sauce, melted butter, and honey in a small bowl. Once the cauliflower is done with its first bake, remove it from the oven. Brush the sauce onto each floret or gently toss them in a bowl with the sauce. Return them to the oven for another 8 to 10 minutes until they are bubbly and slightly charred.
