Heat the oil in a large, heavy-bottomed pot over medium-high heat. Add three “test” kernels. Once they pop, the oil is ready. Pour in the remaining kernels, cover the pot with a lid, and shake it occasionally. Once the popping slows to 2-3 seconds between pops, remove the pot from the heat and transfer the popcorn to a large mixing bowl.
In a light-colored saucepan over medium heat, melt the butter. As it melts, it will begin to foam and crackle. Whisk or swirl the pan constantly. Watch for small brown bits to form at the bottom and listen for the crackling to subside. Once the butter smells nutty and turns a golden amber color, immediately remove it from the heat so it does not burn.
Slowly drizzle the brown butter over the popped corn while tossing the bowl to ensure even distribution. Sprinkle the fine sea salt over the top and give it one final toss. Serve immediately while warm and fragrant.
