Ingredients

Scale
  • 56 Bratwurst links (sliced into 1-inch rounds)
  • 1 tablespoon Olive oil
  • 1/2 cup Lager or Ale (your favorite brand)
  • 4 oz Cream cheese (softened)
  • 1 1/2 cups Sharp cheddar cheese (shredded)
  • 1/2 teaspoon Garlic powder
  • 1/2 teaspoon Smoked paprika
  • 1/4 teaspoon Ground black pepper
  • Fresh chives or green onions (chopped for garnish)

Instructions

  1. Step 1: Slice and Prep the Brats – Start by slicing your bratwurst links into bite-sized rounds, about one inch thick. This ensures they cook quickly and are easy for guests to pick up with a toothpick or fork.
  2. Step 2: Brown the Bratwurst – Heat the olive oil in a large skillet over medium-high heat. Add the sliced brats in a single layer. Cook for about 5-7 minutes, turning occasionally, until they are browned and slightly crispy on both sides. Once cooked, remove them from the pan and set them aside on a paper towel-lined plate.
  3. Step 3: Deglaze and Simmer – Lower the heat to medium. Pour the beer into the same skillet, using a wooden spoon to scrape up any browned bits from the bottom of the pan. Let the beer simmer for about 2 minutes to reduce slightly and concentrate the flavor.
  4. Step 4: Create the Cheese Base – Add the softened cream cheese to the skillet. Whisk it constantly until it has melted into the beer and the mixture is smooth. Stir in the garlic powder, smoked paprika, and black pepper to season the base.
  5. Step 5: Melt the Cheddar – Turn the heat to low. Gradually add the shredded cheddar cheese, one handful at a time. Whisk continuously until the cheese is fully melted and the sauce is thick and creamy. Avoid boiling the sauce once the cheese is added to prevent it from becoming grainy.
  6. Step 6: Combine and Serve – Add the browned bratwurst bites back into the skillet. Toss gently to ensure every piece is thoroughly coated in the beer cheese sauce. Garnish with chopped chives and serve immediately while warm.
