Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper to prevent the cheese from sticking and to make cleanup easier.
Cut the chilled Brie wheel into 12 even bite-sized squares or rectangles. It is easier to cut the cheese while it is cold. On a lightly floured surface, unfold the puff pastry sheet and use a pizza cutter or sharp knife to cut it into thin strips about 1/4 inch wide. These will be your mummy bandages.
Place the brie squares onto the prepared baking sheet. Place a small teaspoon of jam on top of each brie square. Do not use too much jam, or it will overflow and make the pastry soggy during baking.
Take the pastry strips and wrap them around each brie square in a crisscross pattern to resemble a mummy. Leave a small gap near the top of each bite where the “eyes” will eventually go. Tuck the ends of the pastry underneath the cheese.
Lightly brush the puff pastry strips with the beaten egg wash. This will give the mummies a beautiful golden-brown color and a shiny finish once they are baked.
Place the baking sheet in the oven and bake for 12 to 15 minutes, or until the pastry is puffed and golden. Remove from the oven and let them cool for 2 to 3 minutes.
While the cheese is still slightly warm and sticky, press two candy eyeballs into the gap you left in the pastry. Serve immediately while the cheese is gooey and melted.
