Step 1: Season the Corn – Place the corn kernels in a medium mixing bowl. Drizzle with olive oil or melted butter and toss until every kernel is lightly coated. Sprinkle with a pinch of salt and pepper to enhance the natural flavors before cooking.
Step 2: Air Fry for Char – Preheat your air fryer to 400°F (200°C). Place the seasoned corn in the air fryer basket in a single layer. Air fry for 8 to 10 minutes, shaking the basket halfway through. The corn should look slightly golden and have some charred spots when finished.
Step 3: Prepare the Spicy Sauce – While the corn is roasting, whisk together the mayonnaise, sour cream, lime juice, chili powder, smoked paprika, and garlic powder in a small bowl. This creates a creamy, smoky dressing that will bind the corn together.
Step 4: Combine the Ingredients – Once the corn is done, carefully transfer the hot kernels back into the mixing bowl. Pour the creamy sauce over the corn and add half of the crumbled Cotija cheese and half of the chopped cilantro. Stir well until the corn is thoroughly coated and the cheese begins to melt slightly.
Step 5: Assemble and Garnish – Spoon the corn mixture into small serving cups or ramekins. Top each cup with the remaining Cotija cheese, extra cilantro, and a dusting of Tajin or a dash of your favorite hot sauce. Serve immediately while warm.
