Description

A comforting and flavorful dish that combines all the hearty elements of traditional lasagna in a convenient soup form, perfect for busy weeknights.


Ingredients

  • 1 pound ground sausage
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (28 ounces) crushed tomatoes
  • 4 cups chicken or vegetable broth
  • 1 tablespoon Italian seasoning
  • 8 ounces lasagna noodles, broken into pieces
  • 1 cup ricotta cheese
  • 1 cup mozzarella cheese, shredded
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Cook the ground sausage until browned; drain excess fat. Add onions and garlic; sauté until translucent.
  2. Transfer the mixture to a slow cooker. Stir in crushed tomatoes, broth, Italian seasoning, salt, and pepper. Mix well.
  3. Cover and cook on low for 6-8 hours or high for 3-4 hours.
  4. Stir in lasagna noodles about 30 minutes before serving. Once noodles are cooked, add ricotta and half the mozzarella; mix until combined.
  5. Serve hot, garnished with fresh basil and remaining mozzarella on top.
