Ingredients

  • 2 pounds beef chuck roast
  • 4 cups beef broth
  • 3 dried guajillo chiles
  • 2 dried ancho chiles
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 2 teaspoons ground cumin
  • 1 teaspoon oregano
  • 1 teaspoon black pepper
  • 1 tablespoon salt
  • Taco tortillas
  • Chopped onions and cilantro for garnish

Instructions

  1. Soak the dried chiles in warm water for about 15 minutes or until softened. Drain and remove seeds.
  2. Blend the chiles, beef broth, chopped onion, minced garlic, ground cumin, oregano, black pepper, and salt until smooth.
  3. Place the beef chuck roast in a slow cooker and pour the chili sauce over it, ensuring the beef is well-coated. Cook on low for 6-8 hours until tender.
  4. Shred the beef using two forks. Serve in taco tortillas, topped with chopped onions and fresh cilantro.

Notes

Serve with a small bowl of the leftover cooking liquid known as ‘consommé’ for dipping.
