- 2 pounds beef chuck roast
- 4 cups beef broth
- 3 dried guajillo chiles
- 2 dried ancho chiles
- 1 onion, chopped
- 4 cloves garlic, minced
- 2 teaspoons ground cumin
- 1 teaspoon oregano
- 1 teaspoon black pepper
- 1 tablespoon salt
- Taco tortillas
- Chopped onions and cilantro for garnish
Instructions
- Soak the dried chiles in warm water for about 15 minutes or until softened. Drain and remove seeds.
- Blend the chiles, beef broth, chopped onion, minced garlic, ground cumin, oregano, black pepper, and salt until smooth.
- Place the beef chuck roast in a slow cooker and pour the chili sauce over it, ensuring the beef is well-coated. Cook on low for 6-8 hours until tender.
- Shred the beef using two forks. Serve in taco tortillas, topped with chopped onions and fresh cilantro.
Notes
Serve with a small bowl of the leftover cooking liquid known as ‘consommé’ for dipping.
