- 1 lb Skirt steak
- 2 Peaches, chopped
- 1/2 cup Fresh parsley, chopped
- 2 cloves Garlic, minced
- 2 tbsp Red wine vinegar
- 3 tbsp Olive oil
- Salt, to taste
- Pepper, to taste
Instructions
- Preheat the grill to medium-high heat and season the skirt steak generously with salt and pepper on both sides.
- Grill the steak for about 4-5 minutes on each side for medium-rare doneness, until edges are well-browned.
- Combine diced peaches, parsley, garlic, red wine vinegar, olive oil, and salt in a bowl and stir until well mixed.
- Remove the steak from the grill, let it rest for a few minutes, then slice against the grain and serve topped with peach chimichurri.
Notes
For best results, let the chimichurri sit for at least 10 minutes before serving to enhance the flavors.
