Ingredients

  • 1 lb Skirt steak
  • 2 Peaches, chopped
  • 1/2 cup Fresh parsley, chopped
  • 2 cloves Garlic, minced
  • 2 tbsp Red wine vinegar
  • 3 tbsp Olive oil
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Preheat the grill to medium-high heat and season the skirt steak generously with salt and pepper on both sides.
  2. Grill the steak for about 4-5 minutes on each side for medium-rare doneness, until edges are well-browned.
  3. Combine diced peaches, parsley, garlic, red wine vinegar, olive oil, and salt in a bowl and stir until well mixed.
  4. Remove the steak from the grill, let it rest for a few minutes, then slice against the grain and serve topped with peach chimichurri.

Notes
