Skillet Chicken with Shallot Pan Sauce

Description

A delightful dish combining tender chicken breasts with a rich, savory shallot sauce. Perfect for weeknights or special dinners.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 2 shallots, finely chopped
  • 1 cup chicken broth
  • 1 tablespoon Dijon mustard
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. Season the chicken breasts with salt and pepper.
  2. Heat olive oil in a skillet over medium heat. Add the chicken breasts and cook for about 6-7 minutes on each side until golden brown and cooked through. Once cooked, remove chicken from the skillet and set aside.
  3. Add the chopped shallots to the same skillet and cook until softened, about 2-3 minutes.
  4. Pour in the chicken broth and stir in the Dijon mustard, scraping any browned bits from the bottom of the pan to enhance flavor. Let the sauce simmer for a few minutes to reduce slightly.
  5. Return the chicken to the skillet and cook for another 2 minutes, allowing it to soak in the flavors of the sauce.
  6. Garnish with fresh parsley before serving.

Notes

Serve over rice or mashed potatoes, or pair with steamed vegetables. Leftovers can be stored for up to 3 days in the fridge.
