- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- Salt and pepper, to taste
- 2 shallots, finely chopped
- 1 cup chicken broth
- 1 tablespoon Dijon mustard
- 1 tablespoon fresh parsley, chopped
Instructions
- Season the chicken breasts with salt and pepper.
- Heat olive oil in a skillet over medium heat. Add the chicken breasts and cook for about 6-7 minutes on each side until golden brown and cooked through. Once cooked, remove chicken from the skillet and set aside.
- Add the chopped shallots to the same skillet and cook until softened, about 2-3 minutes.
- Pour in the chicken broth and stir in the Dijon mustard, scraping any browned bits from the bottom of the pan to enhance flavor. Let the sauce simmer for a few minutes to reduce slightly.
- Return the chicken to the skillet and cook for another 2 minutes, allowing it to soak in the flavors of the sauce.
- Garnish with fresh parsley before serving.
Notes
Serve over rice or mashed potatoes, or pair with steamed vegetables. Leftovers can be stored for up to 3 days in the fridge.
