Zucchini Noodles with Pesto & Shrimp

Description

A delightful seafood dish that combines succulent shrimp and fresh zucchini, drizzled with aromatic pesto.


Ingredients

  • 2 medium zucchinis
  • 1 cup shrimp, peeled and deveined
  • 1/4 cup pesto
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Parmesan cheese for garnish

Instructions

  1. Using a spiralizer, create zucchini noodles from the zucchinis.
  2. Heat olive oil in a pan over medium heat.
  3. Add shrimp to the pan and cook until they turn pink and opaque, about 3-4 minutes.
  4. Add the zucchini noodles to the pan and sauté for about 2 minutes.
  5. Stir in the pesto and cook for another minute.
  6. Season the dish with salt and pepper to taste and serve topped with Parmesan cheese.

Notes

Best served immediately to maintain the texture of the zucchini noodles. Store leftovers in an airtight container for up to 2 days.
